Recipe: Ring-Around-the-Tuna

From the 1967 “Joys of Jell-O™” booklet:
RING-AROUND-THE-TUNA
A beautiful jewel-like entree salad for your luncheon or buffet table.
1 package Jell-O Lime or Lemon Gelatin
1/4 tsp salt
1 c. boiling water
3/4 c. cold water
2 tbsp vinegar
2 tsp grated onion
1/2 c. diced cucumber
1/2 c. diced celery (optional)
2 tbsp chopped pimiento
2 tbsp sliced stuffed olives
1 can of tuna, drained and flaked
Dissolve Jell-O™ Gelatin and salt in boiling water. Add cold water, vinegar and onion. Chill until very thick. Stir in remaining ingredients. Pour into individual ring moulds or a 1-quart ring mould. Chill until firm. Unmould on crisp salad greens. If desired, serve with additional tuna and top salads with mayonnaise. Makes 4 entrée servings.
